An Architectural Challenge that Highlights the Magic of the Garden

Soil, the Michelin-starred restaurant in Pangrati, is one of Athens’ most unique gastronomic destinations. At the heart of this project lies a stunning historic garden, which Salinox transformed into a space that seamlessly combines nature, design, technology, and respect for architectural heritage.

The construction of the glass enclosure over the garden was a particularly demanding and ambitious challenge—one that the Salinox team successfully met with outstanding results.

Designing Within a Heritage Building

The building that houses Soil is a preserved historic property, full of character but also technical difficulties. As is often the case with old structures, nothing was perfectly aligned: walls, corners, and floors all showed irregularities, making the installation of modern systems highly challenging.

The Salinox team undertook the design and installation of a custom metal framework, which was then clad in wooden paneling, combining strength with refined aesthetics. Working in such an environment required constant on-site adjustments, meticulous inspections, and precision craftsmanship.

Respecting Nature: The Trees That Remained in Place

One key aspect of the project was the decision not to remove the garden’s two large trees. Instead of cutting them down, the structure was designed to embrace them: the glass roof was custom-shaped to allow the trunks to pass through, preserving the natural identity of the space and offering a truly unique atmosphere to Soil’s guests.

Advanced Technology for Comfort and Soundproofing

The roof is made of aluminum, featuring electrically operated sliding glass panels that provide protection from the weather while allowing full control of the space according to changing needs.

In addition, the following elements were installed:

  • Retractable windows with electric glass guillotine systems, offering flexibility in ventilation and lighting;

  • Frame55 hinged doors, combining transparency, minimal design, and excellent thermal and acoustic insulation performance.

Soundproofing was a critical factor in ensuring the peace of the surrounding neighborhood, especially in such a central location as Pangrati.

Wood as an Aesthetic Feature

The project’s metal framework was elegantly clad in carefully selected wooden paneling, adding warmth and a natural feel that harmonizes beautifully with the character of the garden. The choice of materials and finishes was made with special attention to detail, enhancing Soil’s premium profile without compromising its simplicity and earthy essence.


A Model Project for the Architecture of the Future

The collaboration between Salinox and Soil serves as an example of how modern technology, an eco-friendly approach, and refined aesthetics can coexist in perfect balance. The result is not just a functional construction, but an experience that adds value both to the restaurant and to the urban fabric of Athens.
